I always recommend washing, soaking or spouting the lentils like beans before you cook or eat them , it just makes it easier on the digestive system. Red lentils are one of my favorite weekly meal prepping. There are so many creative ways I cook all these colors of lentils.

Prep Time 10-15 minutes
Cook Time about 25-30 minutes
Total Time 40 minutes

1 and 2 cups rinsed, clean red lentils
2 tbsp coconut oil
1 tsp coriander seeds
1 and 2 tsp grated fresh ginger
2 cloves garlic minced or grated
1 jalapeno seeded and minced or cayenne or Hawaiian chili pepper , any chili pepper will do.
1-2 tbsp paprika
1 tbsp ground cumin
2 tbsp unsalted yellow curry powder
1 tbsp black pepper
1 tbsp Rosemary
1 tbsp Thyme
1/4 tsp ground turmeric
3/4 tsp salt
2 cups diced tomatoes
1 and 2 tbsp freshly-squeezed lemon juice
1/2 cup chopped fresh cilantro
handful of basil
Now the fun begins, Instructions
Heat coconut oil, sautéed your tomatoes, garlic, ginger, jalapeño, basil, cilantro for about 3-5 minutes then add the red lentils with 4-6 cups of water, bring to boil.
Season with all the spices above and feel free to add or take away the quantity based on your taste.
Stir and pay attention to not over cook the lentils where it gets too mushy or soft. You want to keep a little crunch to them, reduce the heat to medium-low if needed. Continue to cook, stirring occasionally, Add the pureed spinach you blended to boil all together for about 10 minutes. The water will start to thicken the lentil just to that finish perfection of a dip like texture. You may taste and decide what to add more to your taste. Add extra spice, lemon juice, etc.
Turn off stove, let cool, you can add more fresh cilantro and scallions for garnishes. Serve warm or chilled in a eye catching presentation with your chips, vegetable sticks or whatever you desire.
Leftovers are great for many other days as this dish kept refrigerated or frozen will keep its taste and freshness for weeks in the freezer and about one week in the fridge.
