Hearty and Satisfying Lentil Soup

2 cups red lentils 
2 cups yellow lentils 
2 cups diced ripe tomatoes 
1 yellow onion 
Garlic 
Ginger 
2 cups celery cubed 
4 cups spinach 
2 cups cubed yellow squash or green zucchini 
1/2 cup diced cilantro
2 cups chopped cabbage  
Spices: Cumin, Tumeric, black and white pepper, cayenne, basil, coconut oil, yellow curry powder, paprika, red chili powder , water, sea salt 

Preparation : 

Rinse and clean lentils well . Then 8 cups of boil water, add a cap or two of coconut oil then add lentils to boil. 

Sauté diced onion, minced garlic, diced tomatoes, celery, cabbage, zucchini, cilantro, diced ginger 

Once lentil is ready and soft , add sauté ingredients to boiling lentils and season with love with all the aromatic healing spices. 

Taste and add spices or salt to your preference. Thicken a bit by boiling longer but stir so lentils don’t burn at the bottom. 

Enjoy, prepare for a week worth of goodness. I place mine in my mason jars and heat up while on the go or at work

This serves 4 - 24oz Mason jar stays freshly good for 5 days
